Gluten-Free Pumpkin Spice Muffins

Fall in love with fall with the sweet and spicy aroma of pumpkin spice… in muffin form!

Ingredients

(Makes about 12 muffins)

  • 2 cups buckwheat flour
  • 1/2 cup corn flour
  • 1/2 cup rolled oats
  • 1 can pumpkin puree (15 oz)
  • 2/3 cup melted coconut oil
  • 1 1/2 cups agave syrup
  • 3 tbsp pumpkin seed protein powder
  • 1/2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cloves
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 1 tsp allspice
  • 1 tsp pink Himalayan salt
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine all of the dry ingredients.
  3. Add wet ingredients and stir to combine.
  4. Scoop even portions into parchment-lined muffin tray cups.
  5. Optional step: sprinkle with pumpkin seeds and agave.
  6. Bake for 25 – 30 minutes until edges begin to brown.
  7. Remove from oven to cool.
