Fall in love with fall with the sweet and spicy aroma of pumpkin spice… in muffin form!
Ingredients
(Makes about 12 muffins)
- 2 cups buckwheat flour
- 1/2 cup corn flour
- 1/2 cup rolled oats
- 1 can pumpkin puree (15 oz)
- 2/3 cup melted coconut oil
- 1 1/2 cups agave syrup
- 3 tbsp pumpkin seed protein powder
- 1/2 tsp baking powder
- 2 tsp baking soda
- 2 tsp cloves
- 2 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp allspice
- 1 tsp pink Himalayan salt
- 1 tsp vanilla extract
Directions
- Preheat oven to 350 degrees F.
- Combine all of the dry ingredients.
- Add wet ingredients and stir to combine.
- Scoop even portions into parchment-lined muffin tray cups.
- Optional step: sprinkle with pumpkin seeds and agave.
- Bake for 25 – 30 minutes until edges begin to brown.
- Remove from oven to cool.
